A baker's delight

Freshly baked bread slathered with melted butter, honey or jam can be a hearty accompaniment to any family meal or holiday buffet. Just the aroma of home baked bread throughout the house can turn any occasion into a memorable one. 

Twelve Teche Area residents arrived at the Iberia Parish Parkview Branch Library Friday determined not to let bread making become a lost art in a society that has become fast paced, leaving little time for special home baked treats. The group refused to be intimidated by the seemingly complex and work-intensive process of bread making.

Mandy Armentor, nutritionist and associate extension agent for the Iberia/Vermilion Parish Extension Service/LSU Ag Center offered tips from start to finish on the basics of bread making.

Although the process is a lengthy and messy one, Armentor said freshly baked bread is always worth the extra effort put forth.

"Prepare to get messy and work with your hands. This is no job for jewelry and a watch," said Armentor as she handed out several recipes and tip sheets for baking the perfect loaf of bread.

After following the directions closely to mix and prepare the dough, Linda Landry of New Iberia was ready to learn more about the kneading process.

"I've never made bread before, unless you count unwrapping frozen bread purchased from the grocery store and sticking it in an oven," said Landry.

"But now, I know why the women in the olden days always wore aprons. This is really messy."

Landry said she always wanted to learn how to make yeast rolls from scratch and figured the adult bread workshop offered by the Iberia Parish Library and the LSU AgCenter was a good start.

Ann LaBiche was listening carefully to directions. She was determined to master the art of bread baking to perfection.

"I love homemade bread. I've made bread using a bread machine, but I had a problem getting it to rise. I wanted to learn to make bread the old-fashioned way," said LaBiche.

"I've attempted this before and it came out pretty good, but I wanted to learn more about it," said Joe Langston of New Iberia as he carefully measured each ingredient.

By using rapid rise yeast, Armentor said the process is now faster since the dough only needs to rest 10 minutes before baking. It is not required to double in size as with active dry yeast, which takes anywhere from 1-2 hours to rise.

Armentor said it is important to give the dough a generous workout before letting it rest.

Oh you know how much i love your top 10′s, it saddens me this is the last but what a GREAT collection to go out on, truly so many of them I would love to try out. That chocolate babka and cinnamon raisin walnut bread are especialy appealing to my sweet tooth lovely!

Oooh.. these look so good and this is so timely for me because I just made the decision that come what may I need to start making my own bread again. Just last night I made some Garlic Cheese Bread.. one loaf disappeared as it came out of the oven. Nothing like bread fresh out of the oven!
